Resolutions Schmesolutions…

Every new year gives us the open invitation to begin again. Usually, we start something new and then by mid-February we’ve lost that motivated push and we go back to how we’ve lived every year before. But, I like trendy things usually so I’m jumping on the new year resolution wagon once again but doing things a bit different. Tangible goals. So I suppose sharing them with you here will make them more solid and will hold me accountable!

1. Read more books!
Time to put down the electronics now and then. Flying home for Xmas I bought a book and I’m really into it. Almost forgot how much I loved reading. I want to attempt to read a book in German too. That may be a bit difficult but worth a shot!

2. Eat better and count calories!
Wedding time is just around the corner and I want to feel and look my best for the big day. But besides that, I think its just time to start paying attention more to what I’m eating. I want to change my eating habits so they stick! So counting calories has been helping with that. I write everything down and have been trying to drink 9 cups of water a day. Tough, but so far so good!

3. Live in the “Now”!
Big things are happening this year and I just need to have a healthy balance of looking forward to things and living in the moment. I have a bad habit of looking forward and not coming back! I focus on what is to come instead of making each minute count until I get to that point in the future. So, My goal this year is to live it up, in the here and now!

4. SAVE!SAVE!SAVE!
As I mentioned above, big things are happening this year (you’ll hear about it later :-)) and I really need to get a better savings plan in place for us. Doesn’t hurt to save the pennies. Last year I started a wedding fund and it was basically all loose change goes into the jar. That will be used to buy decorations or whatever for the wedding. Besides all that, I just want a good chunk of money saved in the bank in case anything ever happened or for that rainy day when we need a vacation!

Throwback Thursday – A Babyrific Post!

Another Thursday yet again, only that much closer to the weekend! Woot woot! I’ve been having crazy dreams about babies and fertility drugs and all sorts of whacko stuff. And staying in theme with this week’s post about Germany’s way of announcing babies I decided to throw us all back to a cold December day in 2009 when my nephew was born! He was the first to give me the name “Aunt Kait” and I just fell TOTALLY in love with him when I saw him all wrapped up like a burrito.

Isn’t he adorbs?!? He’s all grown up now practically…talking, walking, saying “no” to everything because he can and because he’s a little manpants. Still totally in love with that sweet boy! This picture was also before I knew I had endometriosis and it was a time where the possibility of having my own child was still an easily reachable goal on the horizon.

For those of you who know that I wrote a story called “The Letter” for a great organization called CausePub, we need a certain amount of people to sign up to buy the electronic story. It’s only $10, and it would help us meet our goal to 1. Publish the book and 2. provide clean water to over 40,000 people in Africa. This is such a big deal to me.

I wrote the story a long time ago, not really sure that I would ever publish it in fear of showing my feelings and sounding too dramatic and spotlight hogging. But that’s not the case. I published it and people wrote to me, thanking me for my bravery. That they share the same feelings and problems and are feeling less alone. To have this story published in a book would be not only incredible for a writer like me but imagine the people it would influence!

Smothered Pork Chops Only At 243 Calories!!!

We’ve been doing good eating better and so far so good! Toblerone loves being my guinea pig of sorts. Actually, I think he doesn’t mind as long as his belly is full!

Tonight I made smothered pork chops with apples, onions, and cheese from Rocco Dispirito’s book, “Now Eat This!” I’ve said it before and I’ll say it again, this guy is a genius…and hot. Of course I didn’t have the exact ingredients so I improvised with what Germany has to offer me but it’s do-able, in all countries people! NO EXCUSES! EAT BETTER!

I’m not big on apples to begin with but the mustardy oniony appley taste is different and paired up perfectly with the pork meat. Guten Appetit!

Normal Smothered Pork Chops:                                                                    Calories 500                    Fat  15 grams

Revised by Rocco:                                                                                                  Calories 243                   Fat  6.5 grams

What you will need:

Nonstick cooking spray

1 Large red onion cut into 1/2 inch thick slices/rings OR 2 small white onions

3 Large Granny Smith Apples, peeled, cored, and cut into 6 or more wedges each (less sugar than the typical applesauce used)

Salt and freshly ground black pepper

1/2 cup low fat, low sodium chicken broth

Four 4 ounce portions of lean pork loin (1 1/2 inches thick) trimmed of all visible fat. For this I used minute pork chops, very thin just cooks quicker. 

2 Tablespoons coarse-grain Dijon mustard

2 Tablespoons chopped fresh tarragon (or I just used dried basil because it’s what I had on hand.)

1/2 cup shredded 50% reduced-fat cheddar cheese such as Cabot. (Germans don’t know what cheddar is so I used the closest I could find.)

1. Preheat oven to 450 F. or 230 C. Spray a large foil-lined baking sheet with cooking spray.

2. Separate the onion rings. Lay the onions and apples on the baking sheet in a single layer. For me, my oven is made for ants so I had to squish a bit. Yours should be more spread out. Spray lightly with cooking spray and season with salt and pepper to taste. Roast the apples and onions until the apples are tender and start to brown on the edges. Should take about 20 mins.

For those who don’t know (I didn’t, I had to look it up!) “Roasting” means to cook/bake at a higher temperature. Just make sure your oven is preheated to the correct temp!

3. Turn the broiler on high. Broil the apples and onions until they are slightly charred – about 3 minutes. The pieces of onions around the edges of the pan charred a lot more than the rest and the apples looked like they were about to explode but that’s probably more because I don’t now what the options on my oven are telling me. I just pick one at random and enjoy the show! 🙂

4. Put about 3/4 cup of the apple-onion mixture in a blender and add the chicken broth. Puree until the mixture is smooth and put the rest of the apple-onion aside. For this, I don’t have a blender but the apples and onions are both so tender and mushy you can easily just smush and whisk with a fork or so. Doesn’t need to be perfect.

5. Heat a large skillet over high heat. Season pork with salt and pepper to taste. When pan is hot, spray with cooking spray and add the pork (careful of splattering!) Sautee until brown on both sides and cooked through ( about 3 minutes or so.) Transfer pork to a plate and cover.

6. Reduce heat of the skillet to low and add the pureed apple-onion mixture. Add the mustard and whisk. Once stirred together, add in the rest of the apples and onions you set aside from earlier and the tarragon if you have it. Be sure to cover the added apples and onions evenly with the sauce.

7. Remove skillet from heat and add salt and pepper. Spoon the mixture over the pork chops and sprinkle with cheese. Serve Immediately.

Together Let’s Fight For Sarah’s Life

I’m just going to come right out and say it. CANCER SUCKS! But one thing that Cancer can’t affect is the amount of love and support that comes around when the “C word” is uttered. I’ve directly been affected  with Cancer in my family and I always try to do what I can when I have the means to. One thing that is free to give…LOVE. Another thing….SUPPORT. I know all of you know someone, directly or indirectly, who has been affected by cancer. However, for me, I feel that no matter if you know the person or not your support can be healing in more ways than one. That’s why I’m joining in the fight. Sarah’s fight. Won’t you join me?

Since Sarah is from Maine I’m targeting all my Mainer friends to pull through and head out to the benefits to do your part. You wouldn’t believe the kind of love one can feel from the kindness of a stranger. For the rest of you, no excuses. I’m 3,000 miles away and supporting this girl with loads of love!

Sarah is a 26 year old mother, wife, daughter, friend, and identical twin. She was 24 when they discovered she had a brain tumor which she kicked out in the summer of 2011. Five weeks later the tumor had returned and this time it was deemed, “inoperable.” She and her family are now in the fight for her life and every bit of support will help. I know this hits home for many of you so let’s see what we can do to offer a heartfelt, ” BEAT THE CRAP OUT OF CANCER” for Sarah. Let’s let her know that the world is cheering her on and we have her back.

She’s currently receiving chemotherapy treatments at the Infusion Center of Tufts Medical Center in Boston and the traveling in itself is tiring but we know the worst of it isn’t the travel time. Six days ago she completed her second chemo treatment and a few weeks ago, her beautiful daughter just started Kindergarten. Aside from the battle she is fighting she has a life to live, memories to make, identical smiles to share with her twin sister, kisses to give her highschool sweetheart husband, and hugs to wrap around her baby girl. Someone as beautiful as her deserves this chance. She can beat this and the more support the better.
