Avocado Feta Salsa – A Party Favorite!

 
It’s Easter weekend! Here in Good ole Germ, everyone gets Friday and the following Monday off making it a nice long weekend! I’ve decided to pull together a team of friends for “game night.” Tobes and I will be assembling our foosball table and I’ve found the games we love to play back home. Other than game night we will all be doing adventure weekends too where we go camping or play mini golf. Just little things to get out and see the world a bit.
 
So, with every party there needs to be fun foods! One of my favorites for any party whether I’m hosting or going, I love to make my Avocado Feta Salsa. It’s so simple to throw together, great colors, and amazing taste!
 
Ingredients you will need:
2 plum tomatoes
1 ripe avocado
1/4 cup finely chopped red onion ( I use half an onion because I love it)
1 clove of garlic, minced (also, normally 2 cloves for me, garlic lover here!)
1 tablespoon olive oil
1 tablespoon red or white wine vinegar ( I usually use Red)
4 ounces crumbled feta cheese
 
How to make it:
In a bowl,  gently stir tomatoes, avocado, onion, and garlic. Carefully stir in olive oil and vinegar to be sure not to turn your ingredients to mush! Stir in the feta cheese then cover and chill for 2 to 6 hours.
 

            It just kills me how simple this is and it’s such a HUGE hit when I bring it to parties! It’s good for the vegetarians in your life as well! Bring a bag of tortilla chips and call it good! It’s simple, cheap, and fast! Just the kind of stuff I love to make!
